Egg Tacos

Ingredients

  • 150mls Puregg liquid egg whites
  • 1 tbsp unsalted butter
  • Freshly ground pepper
  • ½ avocado thinly sliced
  • Tortilla chips
  • Canned corn or beans
  • ¼ cup salsa
  • 1/4 cup grated cheese

Method

  1. Beat the eggs in a medium bowl.
  2. Add ¼ teaspoon each salt and pepper.
  3. In a large non-stick pan, heat butter over medium-high heat. Cook the eggs for 2-3 minutes until soft.
  4. Tip in the eggs evenly into the tortilla chips.
  5. Top with avocado, salsa, cheese and cilantro.
