Egg Tacos
Ingredients
- 150mls Puregg liquid egg whites
- 1 tbsp unsalted butter
- Freshly ground pepper
- ½ avocado thinly sliced
- Tortilla chips
- Canned corn or beans
- ¼ cup salsa
- 1/4 cup grated cheese
Method
- Beat the eggs in a medium bowl.
- Add ¼ teaspoon each salt and pepper.
- In a large non-stick pan, heat butter over medium-high heat. Cook the eggs for 2-3 minutes until soft.
- Tip in the eggs evenly into the tortilla chips.
- Top with avocado, salsa, cheese and cilantro.
