• All drinks use about 15ml Puregg white
  • Dry shake = shake without ice. Important to do this whenever you use Puregg white so that it can emulsify with the other ingredients. You will get a much better looking drink with great mouth feel if you do this. Which is the whole purpose of using Puregg whites in the first place!

Pisco Sour


  • 4 ice cubes
  • 60ml “Del Parral” Quebranta Psico
  • 30ml Lime Juice
  • 15ml pureegg white
  • 15ml simple syrup
  • 3 drops of Angostura Bitters


  1. Mix in shaker 30 seconds
  2. Garnish with 3 drops of angostura bitters and lime round. Serve in a martini or
    sour glass.
