• All drinks use about 15ml Puregg white
  • Dry shake = shake without ice. Important to do this whenever you use Puregg white so that it can emulsify with the other ingredients. You will get a much better looking drink with great mouth feel if you do this. Which is the whole purpose of using Puregg whites in the first place!

Espresso Martini


  • 45ml Vodka
  • 15ml Coffee liqueur
  • 10ml White Cacao liqueur
  • 30ml Cold drip coffee*
  • dash of Puregg white
  • pinch of salt


  1. Add all to a shaker and dry shake.
  2. Add ice and shake for ten seconds.
  3. Fine Strain into a chilled coupette.
  4. Garnish with 3 coffee beans
