• All drinks use about 15ml Puregg white
  • Dry shake = shake without ice. Important to do this whenever you use Puregg white so that it can emulsify with the other ingredients. You will get a much better looking drink with great mouth feel if you do this. Which is the whole purpose of using Puregg whites in the first place!

  • 45ml Gin
  • 15ml Elderflower liqueur
  • 30ml Apple juice
  • 20ml Lime juice
  • 15ml sugar syrup (one part sugar/one part water)
  • One piece of cucumber
  • Few leaves of mint
  • Puregg white


  1. Muddle mint and cucumber in shaker.
  2. Add all other ingredients and dry shake.
  3. Add ice and shake for ten seconds.
