Dry shake = shake without ice. Important to do this whenever you use Puregg white so that it can emulsify with the other ingredients. You will get a much better looking drink with great mouth feel if you do this. Which is the whole purpose of using Puregg whites in the first place!
Pisco Sour
Ingredients
4 ice cubes
60ml “Del Parral” Quebranta Psico
30ml Lime Juice
15ml pureegg white
15ml simple syrup
3 drops of Angostura Bitters
Method
Mix in shaker 30 seconds
Garnish with 3 drops of angostura bitters and lime round. Serve in a martini or
sour glass.
