Protein Plus Omelette

Ingredients

1 carton PUREGG Egg Whites liquid egg whites, well shaken 250 mL
¼ tsp each salt and pepper 1 mL
¼ cup shredded cooked skinless boneless chicken breast 50 mL
2 tbsp shredded low-fat cheddar cheese 30 mL
1 green onion, chopped 1

Direction

  1. Spray 9” (23 cm) non-stick skillet generously with cooking spray; heat over medium-high heat. Pour in liquid egg whites; sprinkle with salt and pepper. Cook and stir for 30 seconds. Let cook 1-2 minutes or until eggs are almost set and bottom is browned.
  2. Sprinkle centre of omelette evenly with chicken, cheese and green onion. Reduce heat to medium; cover and cook 1-2 minutes or until set. Fold two sides of omelette over filling. Cut in half and slide onto two serving plates.

 Tips

  • Make two omelettes to serve 4.
  • For convenience, cook a small chicken breast in microwave oven 2-3 minutes or until no longer pink inside.
  • Fabulous with salsa on the side!
