Puregg white drinks – EARLS JUKE JOINT COCKAILS

All drinks use about 15ml Puregg white

 

Dry shake = shake without ice. Important to do this whenever you use Puregg white so that it can emulsify with the other ingredients. You will get a much better looking drink with great mouth feel if you do this. Which is the whole purpose of using Puregg whites in the first place!

  • 50ml Bulleit Rye Whiskey
  • 10ml Ancho Reyes Chilli Liqueur
  • 30ml Lemon Juice
  • 10ml maple syrup
  • 2 dashes Bitterness Habanero Shrub
  • Puregg White

Dry shake all ingredients without ice.
Add cracked ice and shake for ten seconds.
Strain into a tall glass filled with new ice cubes.
Top with Belgian Cherry Sour Ale e.g. Leifmans Kriek Brut
Garnish with dehydrated maple glazed lime wheel.

 

Eastside Fizz

  • 45ml Gin
  • 15ml Elderflower liqueur
  • 30ml Apple juice
  • 20ml Lime juice
  • 15ml sugar syrup (one part sugar/one part water)
  • one piece of cucumber
  • few leaves of mint
  • Puregg white

Muddle mint and cucumber in shaker.
Add all other ingredients and dry shake.
Add ice and shake for ten seconds.
Strain into a Hi ball glass and top with a dash of soda water.
Garnish with circle of cucumber speared with a mint sprig

 

Espresso Martini

  • 45ml Vodka
  • 15ml Coffee liqueur
  • 10ml White Cacao liqueur
  • 30ml Cold drip coffee*
  • dash of Puregg white
  • pinch of salt

Add all to a shaker and dry shake.
Add ice and shake for ten seconds.
Fine Strain into a chilled coupette.
Garnish with 3 coffee beans

 

Whiskey Sour

  • 60ml Blended scotch
  • 30ml lemon juice
  • 20ml sugar syrup
  • dash of angostura bitters
  • Puregg white

Dry shake all in a shaker.
Add ice and shake for ten seconds.
Strain into a Double old fashioned glass over fresh ice.
Garnish with lemon and cherry

 

Notorious OMG

  • 40ml Vodka
  • 20ml Aperol
  • 30ml lemon
  • 20ml Strawberry Syrup (strawberries mashed and steeped in sugar syrup)
  • Puregg white

Dry shake all in shaker
Add ice and shake for ten seconds.
Fine strain into chilled coupette
Garnish with lemon thyme sprig.
