Choconuts Meringue Drops

Prep Time: 15 minutes
Cooking Time: 25-30 minutes
Makes: 2 dozen cookies


2 cups sweetened shredded coconut 500 mL
1 cup all purpose flour 500 mL
3 tbsp cocoa powder 45 mL
1 cup granulated sugar, divided 250 mL
½ cup PUREGG Simply Egg Whites™ liquid egg whites, well shaken 125 mL
½ tsp vanilla 2 mL
¼ tsp cream of tartar 1 mL
pinch salt


1. Line 2 baking sheets with wax or parchment paper. In small bowl, mix coconut, flour, cocoa and 1/3 cup (75 mL) sugar; set aside.

2. In mixer bowl, beat liquid egg whites, vanilla, cream of tartar and salt until soft peaks form. Gradually add remaining sugar, beating until stiff, shiny peaks form. Gently fold in coconut mixture.

3. Drop by tablespoonful onto baking sheets. Bake at 325°F (160°C) 25-30 minutes or until surface is very firm. Cool completely on parchment paper then peel off and store in airtight container.
